Behind the bar at Palmilla, the stack of bottles of clear and amber liquid looks like a shrine to tequila. That’s probably because it is one – the people who set up this bar have a respect for that elixir that borders on worship. The great names are here, as well as some you have probably never heard of unless you are an aficionado of agave, and they’re served in handcrafted margaritas, “artistic cocktails” from the brain trust behind the bar, and straight up for those who appreciate theirs straight. Palmilla is a great place for fans of other liquor to appreciate tequila – if you have been enjoying Scotch whisky and want to try a tequila that offers a similar smoky richness, this is the place to broaden your horizons.
