Strand House chef Franz creates cup cake worthy of Kings

Strand House pastry chef Stephanie Franz, winner of the 2011 “Cupcake Wars,” created a slightly larger than usual cup cake for the 2014 Stanley Cup Champion Los Angeles Kings this week.
It was three-feet tall, weighed 130 pounds, including 40 pounds of fondant and baked in the shape of the Stanley Cup.
The Kings were served the cake following their Wednesday victory parade through Redondo Beach, Hermosa Beach and Redondo Beach. Each player’s name was inscribed on the cake before it was dusted with edible silver dust.
Franz created the cake over four days with assistance from Shade Hotel sous chef Ashley Oates in the Circa restaurant kitchen. Strand House, Shade Hotel and Circa are all part of the Zislis Group in Manhattan Beach. ER
